Baked Eggplant

Sure it may look a little like bacon and if you cooked it longer at a lower temperature or put it in your dehydrator, it’d get quite crispy too. The slight smokiness and soy sauce umami could even add to the bacon argument, but this isn’t bacon. It’s eggplant and it’s super tasty. Why some vegans and vegetarians give their plant-based food meat names I will never understand. You don’t see omnivores trying to make things like broccoli out of pork, so stop trying to make vegetables taste like specific meats. If you want something that tastes like bacon, eat bacon. Bacon belongs to the meat-eaters. Get your own food names, veg heads.

Time: 30 minutes

Serves: 4

Ingredients:

20g extra-virgin olive oil
5g soy sauce
1g garlic powder
1g smoked paprika
1 eggplant – quartered lengthwise & sliced into 3mm thick strips

 

Preparation:

Preheat oven to 200C (400F).

Whisk together the olive oil, soy sauce, garlic powder and paprika.

Pour it over the eggplant and toss gently to evenly coat each strip.

Bake for twelve minutes on a parchment-lined baking sheet. Turn over the strips and bake for another twelve minutes.

Serve immediately.
