Any clean-tasting fish will work, though fresh and local is always best.<\/p>\n<p><strong>Time: 30 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>1 tablespoon extra virgin olive oil<\/address>\n<address>1 onion \u2013 chopped<\/address>\n<address>4 stalks celery \u2013 chopped<\/address>\n<address>3 cloves garlic \u2013 finely chopped or crushed<\/address>\n<address>2 leeks \u2013 white portion only \u2013 thinly sliced<\/address>\n<address>4 cups vegetable stock<\/address>\n<address>2 tomatoes \u2013 chopped<\/address>\n<address>2 bay leaves<\/address>\n<address>\u00bd teaspoon fresh ground black pepper<\/address>\n<address>\u00bd teaspoon kosher salt<\/address>\n<address>1 pound pickerel (or other fresh fish) filets \u2013 cubed to \u00bd inch<\/address>\n<address>\u00bd cup Italian parsley \u2013 roughly chopped<\/address>\n<address>1 tablespoon fresh dill \u2013 finely chopped<\/address>\n<address>2 teaspoons fresh lemon juice<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Heat the olive oil in a large pot over medium-high heat then add the onion, celery, garlic and leeks, stirring often for five minutes.<\/p>\n<p>Bring heat to high. Add the vegetable stock, tomatoes, bay leaves, pepper and salt, bringing to a boil, then reduce heat to simmer partially covered for five minutes.<\/p>\n<p>Add the pickerel, return to a boil and simmer partially covered for five more minutes.<\/p>\n<p>Stir in the parsley, dill and lemon juice. Simmer for two minutes then remove from heat.
