Red bell pepper is used in place of the traditional tomato for a slightly bolder flavour profile. You can usually find frozen banana leaves at your nearest Caribbean food store and they do add a wonderful tea-like flavour. Even without the banana leaves, this is a brilliant way to cook fish.<\/p>\n<p><strong>Time: 30 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>2 teaspoons extra virgin olive oil<\/address>\n<address>4 4-ounce skinless mahi mahi filets<\/address>\n<address>\u00bc teaspoon kosher salt<\/address>\n<address>\u00bc teaspoon fresh ground pepper<\/address>\n<address>4 1-foot squares of banana leaf<\/address>\n<address>1 red bell pepper \u2013 thinly sliced<\/address>\n<address>1 onion \u2013 thinly sliced<\/address>\n<address>2 tablespoons sliced green olives<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Preheat your oven at 300F.<\/p>\n<p>Preheat a frying pan containing the olive oil over medium-high heat.<\/p>\n<p>Sprinkle both sides of the filets with the salt and pepper and cook in the frying pan for two minutes on each side.<\/p>\n<p>Remove the fish from the pan, placing each filet on a banana leaf and topping with the remaining ingredients. Wrap each filet and vegetable packet in its banana leaf then wrap each in foil.<\/p>\n<p>Bake the foil-wrapped fish packets in the oven for fifteen minutes.
