The lightness of the squash is contrasted wonderfully by the hearty and meaty sauce.<\/p>\n<p><strong>Time: 40 Minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>2 teaspoons extra virgin olive oil<\/address>\n<address>\u00bd pound fresh Italian sausages<\/address>\n<address>2 red bell peppers \u2013 seeded and sliced<\/address>\n<address>1 large onion \u2013 halved and sliced<\/address>\n<address>\u00bd pound mushrooms \u2013 sliced<\/address>\n<address>4 cloves garlic \u2013 thinly sliced<\/address>\n<address>28 ounces crushed tomatoes<\/address>\n<address>\u00bc teaspoon freshly-ground black pepper<\/address>\n<address>\u00bd teaspoon kosher salt<\/address>\n<address>1 spaghetti squash<\/address>\n<address>6 fresh basil leaves \u2013 thinly sliced<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Preheat a deep cast iron pan on medium heat then add the olive oil and sausages. Cook sausages for five minutes on each side and remove from pan.<\/p>\n<p>Place the peppers, onion, mushrooms, and garlic into the pan, stirring occasionally for ten minutes.<\/p>\n<p>While the vegetables are saut\u00e9ing, bring a large pot of water to a boil and prepare the squash by quartering lengthwise then using a spoon to scrape out the seeds and pulp.<\/p>\n<p>Add the tomatoes, black pepper and salt to the pan. Bring to a boil then reduce heat to low, simmering partially covered and stirring occasionally for ten minutes.<\/p>\n<p>Place the squash in the pot of boiling water and boil for twenty minutes.<\/p>\n<p>Slice the sausage and add it back to the pan of sauce, continuing to simmer and stirring occasionally for eight more minutes.<\/p>\n<p>Add the basil to the sauce and cook for two more minutes. Remove from heat.<\/p>\n<p>Remove the squash from the water and let cool enough to safely handle.
