Welcome to your oven&#8217;s broiler. Substitute lamb for the pork if you want a truly rich experience or use chicken breast for a lighter dish.<\/p>\n<p><strong>Time: 30 minutes plus overnight marinating<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p><strong>For the souvlaki:<\/strong><\/p>\n<address>\u00bc cup extra virgin olive oil<\/address>\n<address>\u00bd cup dry red wine<\/address>\n<address>\u00bc teaspoon black pepper<\/address>\n<address>\u00bd teaspoon kosher salt<\/address>\n<address>1 teaspoon dried oregano &#8211; crushed<\/address>\n<address>3 cloves garlic \u2013 crushed or finely chopped<\/address>\n<address>1 pound pork tenderloin \u2013 cut into 1\u201d cubes<\/address>\n<address>\u00a0<\/address>\n<p><strong>For the dressing:<\/strong><\/p>\n<address>2 tablespoons extra virgin olive oil<\/address>\n<address>2 teaspoons fresh lemon juice<\/address>\n<address>1 clove garlic \u2013 crushed or finely chopped<\/address>\n<address>1 teaspoon dried oregano \u2013 ground<\/address>\n<address>\u215b teaspoon kosher salt<\/address>\n<address>\u215b teaspoon freshly ground black pepper<\/address>\n<address>\u00a0<\/address>\n<p><strong>For the Salad:<\/strong><\/p>\n<address>1 head romaine lettuce \u2013 chopped or torn<\/address>\n<address>1 pint grape tomatoes \u2013 halved<\/address>\n<address>\u00bd red onion \u2013 thinly sliced<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Mix all souvlaki ingredients except for pork then add pork and seal in a plastic bag, removing as much air as possible. Refrigerate overnight.<\/p>\n<p>Preheat oven broiler and line a casserole dish with foil. Place pork in casserole dish, discarding excess marinade. Cook under broiler for fifteen minutes, turning occasionally.
