Coerce somebody into being your sous chef and you&#8217;ll want to serve it once a week.<\/p>\n<p><strong>Time: 45 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>1 tablespoon virgin coconut oil<\/address>\n<address>1 pound pork tenderloin \u2013 cubed to \u00bd to 1\u201d<\/address>\n<address>1 tablespoon ground cumin<\/address>\n<address>1 teaspoon kosher salt<\/address>\n<address>\u00bc teaspoon freshly ground black pepper<\/address>\n<address>2 cloves garlic \u2013 minced or crushed<\/address>\n<address>1 sweet potato (yam) \u2013 cubed to \u00bd\u201d or less<\/address>\n<address>4 stalks celery \u2013 chopped<\/address>\n<address>14 ounce can black beans \u2013 rinsed and drained<\/address>\n<address>\u00bc cup orange juice<\/address>\n<address>\u00bc cup fresh lime juice<\/address>\n<address>\u00bd cup chicken stock<\/address>\n<address>\u00bc teaspoon ground cayenne pepper<\/address>\n<address>1 bunch fresh cilantro &#8211; chopped<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Preheat a heavy wok on high heat and add the coconut oil.<\/p>\n<p>Sprinkle the pork with the cumin, salt and pepper then mix to evenly coat.<\/p>\n<p>Put the pork into the wok, stirring often for three minutes then remove before fully cooked.<\/p>\n<p>Put the garlic in the wok and stir constantly for thirty seconds before adding the sweet potato. Cook the sweet potato for five minutes, stirring often.<\/p>\n<p>Add the celery and beans to the wok and cook for five minutes, stirring often.<\/p>\n<p>Add the orange juice, lime juice, chicken stock and cayenne to the wok, stir and let boil for three minutes.<\/p>\n<p>Return the pork to the wok, stir and continue cooking for two minutes.
