Forget the ten-ingredient rubs and complex cooking procedures. Get a quality slab of meat and keep it simple.<\/p>\n\n\n\n<p><strong>Time: 18 hours (plus dry brining time \u2013 20 minutes active)<\/strong><\/p>\n\n\n\n<p><strong>Serves: 12<\/strong><\/p>\n\n\n\n<p><strong>Ingredients:<\/strong><\/p>\n\n\n\n<p>6kg beef brisket<br>60g kosher salt<br>15g cracked black pepper<\/p>\n\n\n\n<p><strong>Preparation:<\/strong><br>Remove any fat from the brisket that is over approximately 5mm thick.<\/p>\n\n\n\n<p>Sprinkle the salt and pepper on both sides and refrigerate overnight (on a rack if possible).<\/p>\n\n\n\n<p>Preheat your smoker to 110C.<\/p>\n\n\n\n<p>Place the brisket on the smoker and cook until the internal temperature reaches 95C (approximately sixteen hours).<\/p>\n\n\n\n<p>Remove the brisket from the smoker and tightly wrap in foil.<\/p>\n\n\n\n<p>Wrap the foiled brisket in towels and place in a portable cooler to keep warm. Let rest for at least two hours.<\/p>\n\n\n\n<p>Unwrap the brisket and slice across the grain.
