Fresh calamari is the key, as frozen can taste exceptionally fishy and have a chewy texture.<\/p>\n<p><strong>Time: 15 minutes plus marinating time<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p><strong>For the calamari:<\/strong><\/p>\n<address>\u00bd cup fresh lemon juice<\/address>\n<address>3 cloves garlic \u2013 crushed or minced<\/address>\n<address>1 teaspoon crushed red pepper flakes<\/address>\n<address>\u00bc teaspoon kosher salt<\/address>\n<address>1 pound calamari<\/address>\n<address>1 tablespoon virgin coconut oil<\/address>\n<address>\u00a0<\/address>\n<p><strong>For the salad:<\/strong><\/p>\n<address>1 tablespoon fresh lemon juice<\/address>\n<address>2 tablespoons olive oil<\/address>\n<address>1 clove garlic \u2013 crushed or minced<\/address>\n<address>\u00bd teaspoon kosher salt<\/address>\n<address>\u215b teaspoon fresh crushed black pepper<\/address>\n<address>2 heads romaine lettuce \u2013 washed and chopped or torn<\/address>\n<address>\u00a0<\/address>\n<p><strong>Calamari Preparation:<\/strong><\/p>\n<p>Mix the lemon juice, garlic, pepper flakes, and salt. Place in a zip top bag and add the calamari. Remove the air from the bag and refrigerate at least thirty minutes or as long as overnight.<\/p>\n<p>Preheat a wok on high heat, add the <span style=\"text-decoration: line-through;\">coconut<\/span> oil then add the calamari and stir-fry for two minutes. Remove from heat and serve over the salad.<\/p>\n<p><strong>Salad Preparation:<\/strong><\/p>\n<p>Whisk together the lemon juice, olive oil, garlic, salt and pepper.
