If you can&#8217;t find pomegranate molasses, try paste. It&#8217;s usually the same. Enjoy!<\/p>\n<p><strong>Time: 45 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>1kg peeled and seeded butternut squash &#8211; cubes to 2cm<br \/>\n30ml avocado oil (or other cold-pressed, neutral-flavoured oil)<br \/>\n5g salt<br \/>\n1g black pepper<br \/>\n50g raw pumpkin seeds<br \/>\n200ml plain Greek yogurt<br \/>\n10g fresh basil leaves &#8211; chiffonade<br \/>\n20ml pomegranate molasses<\/p>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Preheat your oven to 220C.<\/p>\n<p>Toss the squash cubes with the oil a salt to coat evenly. Spread on a sheet pan and place in the oven for thirty minutes, turning a time or two.<\/p>\n<p>Bake the pumpkin seeds on a separate pan for the last five minutes of the squash\u2019s cooking time.<\/p>\n<p>Spread the yogurt across the bottom of the serving vessel. Add the squash.
