I sure do. It&#8217;s been far too long since we&#8217;ve visited what we consider our second home. Making this dish made me feel a whole lot better even if the true New Orleanians would say serving it with brown basmati rice is sacrilege. If you&#8217;re looking for gumbo file powder in Winnipeg, I&#8217;m happy to report <a href=\"https:\/\/spiceworld.ca\/\">Spice World<\/a> carries it. Laissez les bons temps rouler!<\/p>\n<p><strong>Time: 60 minutes<\/strong><\/p>\n<p><strong>Serves: 6<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>30ml avocado or other cold-pressed neutral-flavoured oil<br \/>\n400g boneless-skinless chicken thighs &#8211; diced<br \/>\n400g smoked andouille or other smoked sausage<br \/>\n2 green bell peppers &#8211; seeded and diced<br \/>\n2 onions &#8211; diced<br \/>\n4 stalks celery &#8211; diced<br \/>\n4 cloves garlic &#8211; finely chopped<br \/>\n7g salt<br \/>\n5g chili powder<br \/>\n3g dried oregano<br \/>\n2g paprika<br \/>\n2g garlic powder<br \/>\n1g cayenne pepper (optional)<br \/>\n1g white pepper<br \/>\n1g black pepper<br \/>\n900ml chicken stock<br \/>\n150ml tomato paste<br \/>\n3 bay leaves<br \/>\n10g file powder (ground sassafras leaves)<br \/>\n6 green onions \u2013 sliced<\/p>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Place a large pot on medium-high heat and add the oil.<\/p>\n<p>When the oil is hot, add the chicken and sausage. Cook, stirring occasionally until the chicken is nearly cooked through (approximately ten minutes).<\/p>\n<p>Stir in the peppers, onions, celery and garlic. Cook, stirring occasionally until the vegetables soften (approximately five minutes).<\/p>\n<p>Stir in the salt and spices, cooking for two minutes.<\/p>\n<p>Stir in the stock and tomato paste and bay leaves. Bring to a simmer and reduce heat to maintain for 30 minutes.<\/p>\n<p>Remove from heat and stir in the file powder. Let stand for five minutes.<\/p>\n<p>Serve immediately or refrigerate and gently reheat.
