That&#8217;s on you. As for the mayo, the volume means using a small blender jar or food processor. If you haven&#8217;t got either, double or triple the recipe to use a full-size processor and refrigerate the rest for another day.<\/p>\n<p><strong>Time: 40 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p><strong>For the fiddleheads:<\/strong><br \/>\n2 litres water<br \/>\n20g kosher salt<br \/>\n400g fiddlehead ferns<\/p>\n<p><strong>For the mayo:<\/strong><br \/>\n1 egg yolk<br \/>\n15g oil-packed sun-dried tomatoes &#8211; finely chopped<br \/>\n10ml lemon juice<br \/>\n2g kosher salt<br \/>\n80ml avocado or other cold-pressed neutral-flavoured oil<\/p>\n<p>400g fresh Italian sausage &#8211; sliced to 1cm pieces<\/p>\n<p><strong>Preparation:<\/strong><\/p>\n<p>In a suitable pot, bring the water to a boil. Add the salt and fiddleheads. Boil for ten minutes, drain and set aside.<\/p>\n<p>Place all mayonnaise ingredients except oil in a small food processor or blender jar. Slowly drizzle in the oil with the machine running. Set aside.<\/p>\n<p>Place a frying pan on medium heat and add the sausage.
