What better way to experiment than with a dozen people trying a creation for the first time, right? I thought it was great too, so here it is. I used black Hawaiian salt for some crunch and contrast. It worked well and looked great until the flakes in the orange juice began to dissolve. If you haven&#8217;t got black salt, use a sprinkle of pretty much any non-iodized salt.<\/p>\n<p><strong>Time: 15 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>50ml fresh orange juice<br \/>\n200g jumbo scallops &#8211; sliced into discs<br \/>\n1\/2 Serrano pepper &#8211; thinly sliced<br \/>\n20ml extra-virgin olive oil<br \/>\n3ml black Hawaiian salt<br \/>\nOrange zest<br \/>\nLemon zest<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Pour orange juice onto the serving tray then.<\/p>\n<p>Lay scallops on juice in a single layer.<\/p>\n<p>Top each scallop with a slice of serrano, drizzle with olive oil and sprinkle with remaining ingredients.<\/p>\n<p>Serve immediately.<\/p>\n<p><a href=\"http:\/\/www.kevskitchen.com\/wp-content\/uploads\/2017\/08\/Scallop-Crudo.pdf\">Get the PDF and nutrition info<\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>I tested this for the first time at wine club and the members seemed to really enjoy it.
