This simple soup is normally served with tofu, though that doesn&#8217;t really work for me, so we&#8217;re going to have shrimp!<\/p>\n<p><strong>Time: 30 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>20g wakame<br \/>\n1.5 litres cool water (plus water for wakame)<br \/>\n30g kombu<br \/>\n10g bonito flakes<br \/>\n100g shiro (white) miso<br \/>\n350g large, uncooked shrimp<br \/>\n4 green onions &#8211; sliced and whites discarded<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Place the wakame in a small bowl and cover with a few centimetres of additional water. Set aside.<\/p>\n<p>Bring the six litres of water and kombu to a boil over high heat.<\/p>\n<p>Remove from heat and add the bonito flakes by sprinkling on top. Let rest for three minutes.<\/p>\n<p>Strain the broth through cheesecloth or a coffee filter, discarding the kombu and bonito flakes.<\/p>\n<p>In a small bowl, stir together the miso and 150ml of the broth. Set aside.<\/p>\n<p>Return the remaining broth to a pot on high heat.
