All you really need to know is it pairs beautifully with beef. It&#8217;s a classic French preparation and this is simply how I make it.<\/p>\n<p><strong>Time: 50 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>50ml grapeseed or other neutral-flavoured oil<br \/>\n200g shallots &#8211; small dice<br \/>\n1 pinch fresh ground black pepper<br \/>\n60ml balsamic vinegar<br \/>\n250ml dry red wine<br \/>\n2 sprigs fresh rosemary<br \/>\n250ml beef or vegetable stock<br \/>\n30g butter<br \/>\n3g kosher salt<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Place a saucepan (approx. 1.5l) on medium-high heat and add the oil.<\/p>\n<p>When the oil is hot, add the shallots and pepper, stirring occasionally for five minutes.<\/p>\n<p>Stir in the vinegar and wine, then add the rosemary. Maintain burner temperature, cooking for ten minutes once a boil is reached, stirring occasionally.<\/p>\n<p>Remove and discard the rosemary.<\/p>\n<p>Stir in the stock and cook for fifteen minutes or until liquid is reduced to approximately the level of the shallots.<\/p>\n<p>Remove from heat and whisk in the butter.<\/p>\n<p>Stir in the salt and serve.<\/p>\n<p><a href=\"http:\/\/www.kevskitchen.com\/wp-content\/uploads\/2016\/10\/Red-Wine-Shallots.pdf\">Get the PDF and nutrition info<\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>This sauce is amazing with steaks, though here I chose to add it to sous vide beef short rib on waffle-cut potato crisps.
