Either way, you win.<\/p>\n<p><strong>Time: 30 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>81g kosher salt<br \/>\n300g squid rings<br \/>\n40g extra-virgin olive oil<br \/>\n20g fresh lemon juice<br \/>\n1 clove garlic &#8211; very finely chopped or grated<br \/>\n0.5g chili flakes<br \/>\n4 navel oranges &#8211; supremed<br \/>\n1 small bulb fennel &#8211; very thinly sliced<br \/>\n1\/2 red onion &#8211; very thinly sliced<br \/>\n12 sundried and pitted black olives &#8211; roughly chopped<br \/>\n20g Italian parsley leaves<\/p>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Bring 5 litres of water and 80g of the salt to a boil on high heat in a large pot.<\/p>\n<p>Add the squid, cooking for 90 seconds.
