One of those dishes has always been salmon patties, though they weren&#8217;t exactly fine dining when\u00a0made with canned salmon and breadcrumbs. Since we&#8217;ve been hosting the past two years, I&#8217;ve managed to push the envelope a little and one of the ways is serving salmon patties made with fresh ingredients and more flavours.<\/p>\n<p>In the image, the salmon bites are plated with homemade garlic mayo and garnished with green onion.<\/p>\n<p><strong>Time: 30 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>500g fresh salmon fillet &#8211; cubed<br \/>\n3 green onions \u2013 roughly chopped \u2013 root portion discarded<br \/>\n1 clove garlic &#8211; finely chopped or grated<br \/>\n50g red bell pepper \u2013 roughly chopped<br \/>\n1 egg<br \/>\n15g fresh lemon juice<br \/>\n5g arrowroot powder<br \/>\n3g kosher salt<br \/>\n0.5g fresh ground black pepper<br \/>\n30g grapeseed or other neutral-tasting cooking oil<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Place a large frying pan on medium heat.<\/p>\n<p>Place all ingredients except oil into a food processor and pulse until finely chopped.<\/p>\n<p>Add some of the oil to the pan and when it\u2019s hot, use a tablespoon to spoon balls of salmon mixture into the pan.
