Overcooked, it&#8217;s mush. Balance is key here and the rather salty water makes it happen.<\/p>\n<p><strong>Time: 20 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>3000g water<br \/>\n20g salt<br \/>\n300g rapini (broccoli raab) \u2013 5cm slices \u2013 thick stalks discarded<br \/>\n30g extra-virgin olive oil<br \/>\n5g garlic &#8211; finely chopped or grated<br \/>\nZest of \u00bd an orange<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Place the water and salt in a large pot and bring to a boil over high heat.<\/p>\n<p>Add the rapini and return to a boil.
