This low-fat version of an Indian-inspired classic is simple to make and the richness beats butter hands down.<\/p>\n<p><strong>Time: 60\u00a0<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>1 cup plain low-fat yogurt<\/address>\n<address>\u00bd cup ground almonds<\/address>\n<address>1 \u00bd teaspoons chili powder<\/address>\n<address>\u00bc teaspoon crushed bay leaves (or two whole)<\/address>\n<address>\u00bc teaspoon ground cloves<\/address>\n<address>\u00bc teaspoon ground cinnamon<\/address>\n<address>1 teaspoon garam masala<\/address>\n<address>4 green cardamom pods<\/address>\n<address>1 teaspoon ginger pulp<\/address>\n<address>1 teaspoon garlic pulp<\/address>\n<address>14 ounce can diced tomatoes \u2013 with juice<\/address>\n<address>1 \u00bc teaspoons Kosher salt<\/address>\n<address>1 pound boneless, skinless chicken breast \u2013 cut into 1 inch cubes<\/address>\n<address>2 large onions \u2013 sliced<\/address>\n<address>2 tablespoons fresh cilantro \u2013 finely chopped<\/address>\n<p>&nbsp;<\/p>\n<p><strong>Preparation:<\/strong><\/p>\n<p>In a mixing bowl stir together all ingredients from yogurt to salt then add the chicken.<\/p>\n<p>Preheat a large pot on medium low, coat with cooking spray, add onions and cook for approximately 15 minutes until the onions become soft and translucent.<\/p>\n<p>Add the yogurt and chicken mixture to the pot with the onions and turn heat to medium-low.<\/p>\n<p>Cook, stirring occasionally for approximately 30 minutes until sauce thickens and chicken is cooked through.<\/p>\n<p>Add the cilantro and serve. (A bed of Basmati rice is perfect for this.)
