This is a rich, calorie-dense soup and it&#8217;s perfect for a cool evening. The arrowroot powder is just a thickener. If you haven&#8217;t got any, make the soup without it or use flour if you eat grains.<\/p>\n<p><strong>Time: 40 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>60g unsalted butter<br \/>\n300g cremini mushrooms \u2013 finely chopped<br \/>\n100g shallots \u2013 finely chopped<br \/>\n10g garlic &#8211; finely chopped or grated<br \/>\n1g dried thyme<br \/>\n5g kosher salt<br \/>\n2g fresh ground black pepper<br \/>\n500g chicken stock<br \/>\n500g heavy cream<br \/>\n20g arrowroot powder (optional)<\/p>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Place a five or six litre pot on medium-high heat. Add the butter and mushrooms, stirring occasionally for ten minutes or until the mushrooms begin to brown.<\/p>\n<p>Stir in the shallots, garlic, thyme, salt and pepper. Cook for four minutes, stirring occasionally.<\/p>\n<p>Add the chicken stock and turn the heat to high. Bring to a boil for five minutes.<\/p>\n<p>Turn the heat to medium-low. Whisk in the cream and arrowroot powder.
