If you&#8217;ve had them before and didn&#8217;t enjoy them because they had a chalky texture, that&#8217;s likely because they were overcooked. The key to keeping this treat tender is to cook them until they&#8217;re just a little pink inside.<\/p>\n<p><strong>Time: 20 minutes<\/strong><\/p>\n<p><strong>Serves: 4 as a starter<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>15g olive oil<br \/>\n150g shallots \u2013 thinly sliced<br \/>\n10g garlic \u2013 finely chopped<br \/>\n200g dry red wine<br \/>\n400g chicken livers \u2013 cut into 3cm pieces<br \/>\n5g kosher salt<br \/>\n1g fresh ground black pepper<br \/>\n10g parsley<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Place a pan on medium heat and add the oil.<\/p>\n<p>Add the shallot and garlic, stirring occasionally for two minutes.<\/p>\n<p>Pour in the wine and reduce for four minutes.<\/p>\n<p>Turn heat to high, adding the chicken livers, salt and pepper.
