I like to make a batch of this and keep it in the fridge for speedy lunches throughout the week. It gets even better after if sits for a while and is reheated. If you eat grains, serve it on brown basmati rice and if you don&#8217;t, grated cauliflower &#8220;rice&#8221; is excellent as well. Of course, these lentils are also great eaten without an accompaniment.<\/p>\n<p><strong>Time: 30 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>1\u00bd cups split red lentils<br \/>\n4 cups water<br \/>\n1\u00bd teaspoons kosher salt<br \/>\n\u00be teaspoon ground turmeric<br \/>\n1 tablespoon coconut oil<br \/>\n2 cloves garlic &#8211; finely chopped or grated<br \/>\n\u00bd teaspoon Indian hot chili powder<br \/>\n1 large tomato \u2013 chopped<br \/>\n2 tablespoon cilantro \u2013 finely chopped<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Combine the lentils, water, salt and turmeric in a pot on high heat. Bring to a boil, then reduce to simmer for ten minutes.<\/p>\n<p>While the lentils are simmering, place a deep frying pan on medium heat and add the coconut oil.<\/p>\n<p>When the oil is hot, add the garlic and chili powder, stirring frequently for thirty seconds.<\/p>\n<p>Stir the tomato into the oil mixture and cook, stirring occasionally for three minutes.<\/p>\n<p>Add the lentils and their liquid to the frying pan and simmer, stirring occasionally for ten minutes.<\/p>\n<p>Remove from heat and serve garnished with the cilantro.<\/p>\n<p><a href=\"http:\/\/www.kevskitchen.com\/wp-content\/uploads\/2015\/08\/Chili-Garlic-Lentils.pdf\" target=\"_blank\">Get the PDF and nutrition info<\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Thanks to food like this, even I will say you don&#8217;t need to eat meat with every meal.
