I just don&#8217;t think it produces results in the accurate and consistent fashion of other techniques such as sous vide. It is fast though and an outdoor grill doesn&#8217;t heat up the house on an already sweltering day. A skin-on filet perfect for grilling as the skin protects the flesh from most of the direct heat while still allowing some caramelization. I used arctic char for this recipe, though many other types of fish would work just as well.<\/p>\n<p><strong>Time: 20 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>2 tablespoons extra-virgin olive oil<br \/>\n1 cloves garlic \u2013 finely chopped or grated<br \/>\n\u00bd teaspoon parsley \u2013 finely chopped<br \/>\n\u00bc teaspoon kosher salt<br \/>\n1 pinch red pepper flakes<br \/>\n1 pound arctic char filet \u2013 skin on<br \/>\n1 teaspoon fresh lemon juice<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Preheat your grill on medium-high.<\/p>\n<p>Whisk together the oil, garlic, parsley, salt and pepper flakes.<\/p>\n<p>Place char on the grill skin-side down and baste the flesh side with the oil mixture.<\/p>\n<p>Grill with the lid closed for five minutes or until the fish is done to your liking.<\/p>\n<p>Serve drizzled with the lemon juice.<\/p>\n<p><a href=\"http:\/\/www.kevskitchen.com\/wp-content\/uploads\/2015\/06\/Grilled-Char.pdf\" target=\"_blank\">Get the PDF and nutrition info<\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Those who know me, also know that I&#8217;m not a huge fan of grilling as a cooking method.
