Regardless, I&#8217;m going to say when ingredients come together like this, it&#8217;s my favourite kind of cooking.<\/p>\n<p>Fresh basil and tomatoes from our <a href=\"http:\/\/stleongardens.com\/?lang=en\" target=\"_blank\">local garden market<\/a>, incredible white anchovies and parmesan from our <a href=\"http:\/\/www.deluca.ca\/grocery\/\" target=\"_blank\">Italian store<\/a> and top-notch balsamic from the <a href=\"http:\/\/www.frescolio.ca\" target=\"_blank\">olive oil tasting bar<\/a>. Add some salt in the right way along with a pinch of pepper and you have a tomato salad that rivals some of the best dishes you&#8217;ve ever eaten.<\/p>\n<p>Be sure to use white anchovies for this salad. They are entirely different from those super salty, fishy things in the can you&#8217;re likely familiar with.<\/p>\n<p><strong>Time: 20 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>4 cups cocktail tomatoes \u2013 quartered<br \/>\n1 teaspoon kosher salt<br \/>\n\u00bc cup basil \u2013 chiffonade<br \/>\n1 tablespoon balsamic vinegar<br \/>\n1 pinch fresh ground black pepper<br \/>\n12 white anchovy filets<br \/>\n3 tablespoons parmesan cheese &#8211; flaked<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Place the quartered tomatoes in a colander and sprinkle with salt.
