That pretty much describes this refreshing plate of seafood. I went with Italian seasonings here, though the possibilities for options are endless. Try lime juice and some green chillies with cilantro or pineapple juice with chili powder in place of the lemon juice and herbs. Have fun with it and let me know your favourite combination!<\/p>\n<p><strong>Time: 30 minutes (plus overnight marinating)<\/strong><\/p>\n<p><strong>Serves: 6<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>\u00bd cup fresh lemon juice<br \/>\n\u00bd cup extra-virgin olive oil<br \/>\n2 cloves garlic finely chopped or grated<br \/>\n1 tablespoon packed fresh thyme<br \/>\n1 tablespoon packed fresh oregano<br \/>\n1 tablespoon packed fresh basil<br \/>\n1 teaspoon kosher salt<br \/>\n\u00bd teaspoon chili flakes<br \/>\n\u00bd red onion \u2013 small dice<br \/>\n10 ounces large scallops<br \/>\n10 ounces peeled and deveined shrimp<br \/>\n10 ounces calamari rings<\/p>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Place a large pot of water on high heat and bring to a boil.<\/p>\n<p>While the water is heating, place the lemon juice, olive oil, garlic, thyme, oregano, basil and salt in a blender. Blend until well-combined. Stir in the chili flakes and onion.<\/p>\n<p>Once the water reaches a boil, add the scallops, shrimp and calamari to the pot and turn off the burner. Wait one minute then, strain the seafood and let cool.<\/p>\n<p>Put the seafood in a large zipper seal freezer bag and pour in the marinade. Seal the bag and shake to coat evenly.
