The quality of the tomatoes is important here because there&#8217;s nothing to mask the flavour. I recommend San Marzano tomatoes that can generally be found at Italian specialty stores, though if you have some canned from your own garden, there&#8217;s a good chance they&#8217;ll be even better!<\/p>\n<p><strong>Time: 45 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>1 pound ground chicken thighs<br \/>\n1 cup cremini mushrooms \u2013 finely chopped<br \/>\n2 cloves garlic finely chopped or grated<br \/>\n2 teaspoons fresh basil \u2013 finely chopped<br \/>\n2 teaspoons fresh oregano \u2013 finely chopped<br \/>\n2 teaspoons kosher salt<br \/>\n\u00bc teaspoon fresh ground black pepper<br \/>\n1 tablespoon extra-virgin olive oil<br \/>\n28 ounce can whole San Marzano tomatoes<br \/>\n1 ounce parmesan cheese &#8211; shaved<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Using your fingers, combine the chicken, mushrooms, garlic, basil, oregano, 1\u00bd teaspoons of the salt and the pepper then, form into eight balls.<\/p>\n<p>Place a high-sided frying pan on medium heat and add the olive oil.<\/p>\n<p>When the oil is hot, brown the meatballs on all sides (about ten minutes).<\/p>\n<p>Pour the tomatoes into a bowl and add the remaining \u00bd teaspoon of salt.
