When he asked for more African and Caribbean-influenced dishes, the first one I thought of was <a title=\"Doro Wat\" href=\"http:\/\/www.kevskitchen.com\/?p=2456\">Doro Wat<\/a>. Here&#8217;s another that fits the bill. I know you&#8217;ll want to use goat Dave, so go for it and if you&#8217;ve got the guts to slide that car of yours around a track, you should be able to up the Scotch bonnet count to at least four!<\/p>\n<p><strong>Time: 2.5 hours<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>2 tablespoons grapeseed or other neutral-flavoured oil<br \/>\n1 pound bison stew pieces<br \/>\n1 onion \u2013 roughly chopped<br \/>\n1 bunch kale \u2013 thick stems discarded &amp; leaves roughly chopped<br \/>\n2 teaspoons dried thyme<br \/>\n2 teaspoons allspice<br \/>\n2 Scotch bonnet peppers \u2013 halved<br \/>\n1 \u00bc teaspoons kosher salt<br \/>\n\u00bc teaspoon fresh ground black pepper<br \/>\n1 can (6 ounces) tomato paste<br \/>\n1 \u00bd cups beef stock<br \/>\n1 pound yam \u2013 peeled and cubed to \u00be\u201d<\/p>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Preheat oven to 325F.<\/p>\n<p>Place a dutch oven on medium-high heat and add the oil.<\/p>\n<p>When the oil is hot, add the bison, turning occasionally until browned on all sides.<\/p>\n<p>Stir in all remaining ingredients expect the yam. Cover the pot and place in the oven for one hour.<\/p>\n<p>Add the yam to the dutch oven and toss gently, returning it covered to the oven for one more hour.<\/p>\n<p>Remove from the oven.
