It reminded me that it had been far too long since I cooked anything with Ethiopian flavours, so I decided to make this chicken stew (doro wat). The decadent smell of ghee and the complexity of berbere make this something you absolutely must try. If you have a high heat tolerance, double the amount of berbere. It will make you very happy.<\/p>\n<p><strong>Time: 90 minutes<\/strong><\/p>\n<p><strong>Serves: 6<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>\u00bc cup ghee (clarified butter)<br \/>\n2 onions \u2013 chopped<br \/>\n4 cloves garlic &#8211; finely chopped or grated<br \/>\n2 teaspoons freshly-grated ginger<br \/>\n1 tablespoon Ethiopian berbere<br \/>\n1 teaspoon kosher salt<br \/>\n2 tablespoons tomato paste<br \/>\n\u00bd cup dry red wine<br \/>\n3 pounds bone-in skinless chicken pieces<br \/>\n6 hard boiled eggs &#8211; halved<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Preheat the oven to 350F.<\/p>\n<p>Place a dutch oven on medium heat and add the ghee.<\/p>\n<p>When the ghee is hot, add the onion, garlic and ginger, stirring occasionally for seven minutes.<\/p>\n<p>Stir in the berbere, salt, tomato paste and wine then, add the chicken pieces, turning to coat.<\/p>\n<p>Cover the dutch oven and place it in the oven for one hour.<\/p>\n<p>Place the dutch oven on medium heat and remove the chicken, setting it aside to keep warm.
