It&#8217;s the sort of thing you&#8217;d find in a <a title=\"Yakitori Wiki\" href=\"http:\/\/en.wikipedia.org\/wiki\/Yakitori\" target=\"_blank\">yakitori<\/a> (something I really wish we had in Winnipeg). Of course, drinking Japanese beer with this dish would be entirely appropriate; just don&#8217;t make it one of the horrible macro-brews like Sapporo or Asahi. Something from <a title=\"Kiuchi Brewery\" href=\"http:\/\/www.kodawari.cc\/?en_home.html\" target=\"_blank\">Kiuchi Brewery<\/a> would be fun and worthwhile seeking out.<\/p>\n<p><strong>Time: 30 minutes (plus marinating time)<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>2 tablespoons miso paste<br \/>\n2 tablespoons mirin<br \/>\n1 tablespoon rice vinegar<br \/>\n1 teaspoon fresh ginger \u2013 grated<br \/>\n2 cloves garlic &#8211; finely chopped or grated<br \/>\n24 ounces boneless-skinless chicken thighs<br \/>\n1 tablespoon grapeseed or other neutral-tasting oil<\/p>\n<p><strong>Preparation:<\/strong><\/p>\n<p>In a small bowl, whisk together the miso, mirin, rice vinegar, ginger and garlic.<\/p>\n<p>Open the chicken thighs, laying them flat between two pieces of plastic wrap. Flatten the to roughly the same thickness using a meat mallet or heavy frying pan.
