Either make sure you have a good range hood set to high or use your outdoor grill. The smoky flavour is incredible, though to get it obviously requires the generation of plenty of smoke! This is so easy to prepare and the range of flavours and textures is difficult to beat. Just make it this week. You&#8217;ll thank me.<\/p>\n<p><strong>Time: 20 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>3 tablespoons extra-virgin olive oil<\/address>\n<address>1 tablespoon fresh lemon juice<\/address>\n<address>1 pinch kosher salt<\/address>\n<address>1 pinch fresh ground black pepper<\/address>\n<address>1 teaspoon flat-leaf parsley \u2013 finely chopped<\/address>\n<address>\u00bd clove garlic &#8211; finely chopped or grated<\/address>\n<address>1 pound large scallops<\/address>\n<address>10 ounces semi-dry (ready-to-eat) chorizo \u2013 sliced<\/address>\n<address>12 ounces grape tomatoes<\/address>\n<address>\u00bd red onion \u2013 cut into wedges<\/address>\n<p>&nbsp;<\/p>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Preheat a ribbed grill pan or your BBQ grill on high.<\/p>\n<p>In a small bowl, whisk together the oil, lemon juice, salt, pepper, parsley and garlic.<\/p>\n<p>Skewer a chorizo slice, scallop, onion piece then, tomato, repeating until each skewer is full.<\/p>\n<p>Baste the full skewers with the oil mixture.<\/p>\n<p>Grill the skewers for one minute on each of four sides.<\/p>\n<p>Remove from heat and serve immediately.<\/p>\n<p><a title=\"Scallops &amp; Chorizo\" href=\"http:\/\/www.kevskitchen.com\/wp-content\/uploads\/2014\/12\/Scallops-Chorizo.pdf\" target=\"_blank\">Get the PDF and nutrition info<\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>I&#8217;ll offer only one piece of advice for making this dish.
