There&#8217;s also plenty of room for experimentation here as well. Try using different legumes such as white beans or chickpeas or change the texture by chopping the mushroom or onion to a different size. One more note: a <a title=\"Pastry Blender\" href=\"http:\/\/en.wikipedia.org\/wiki\/Pastry_blender\">pastry blender<\/a>\u00a0makes preparing this dish even easier.<\/p>\n<p><strong>Time: 30 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>4 teaspoons neutral-flavoured oil such as grapeseed<\/address>\n<address>1 medium onion \u2013 finely chopped<\/address>\n<address>2 cloves garlic &#8211; finely chopped or grated<\/address>\n<address>1 large portobello mushroom \u2013 finely chopped<\/address>\n<address>1 teaspoon ground coriander<\/address>\n<address>1 teaspoon chili powder<\/address>\n<address>\u00bd teaspoon cumin<\/address>\n<address>19-ounce can red kidney beans \u2013 rinsed and drained<\/address>\n<address>1 teaspoon hot pepper sauce<\/address>\n<address>\u00bd teaspoon kosher salt<\/address>\n<address>4 green onions \u2013 thinly sliced lengthwise<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Place two teaspoons of the oil in a frying pan on medium heat.<\/p>\n<p>Add the onions, garlic, mushroom, coriander, chili and cumin. Cook for five minutes, stirring occasionally then, remove from heat.<\/p>\n<p>Put the kidney beans, hot sauce and salt in a bowl and add the onion mixture.
