People often think certain things are only for breakfast and others for dinner. Good luck trying to lock this one down!<\/p>\n<p>It&#8217;s essentially a red flannel hash, though I&#8217;ve used sausage rather than the typical bacon. If you&#8217;re serving it for dinner, consider a different type of sausage such as a spicy chorizo. It&#8217;ll take the flavours in a whole different direction.<\/p>\n<p><strong>Time: 30 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>2 teaspoons grapeseed or other neutral-tasting oil<\/address>\n<address>1 pound beets \u2013 peeled and diced to \u00bd\u201d<\/address>\n<address>1 yellow onion \u2013 diced to \u00bc\u201d<\/address>\n<address>\u00bc teaspoon plus a pinch kosher salt<\/address>\n<address>12 ounces ham garlic sausage \u2013 sliced<\/address>\n<address>4 eggs<\/address>\n<address>1 pinch fresh ground black pepper<\/address>\n<address>4 green onions &#8211; sliced<\/address>\n<p>&nbsp;<\/p>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Place a medium pot of water on high heat until it reaches a simmer then, reduce heat to maintain.<\/p>\n<p>While the water is warming, place a frying pan on medium heat and add the oil.<\/p>\n<p>When the oil is hot, add the beets, yellow onion and \u00bc teaspoon of the salt. Cook, stirring occasionally for five minutes.<\/p>\n<p>Add the garlic sausage and continue to cook, stirring occasionally for ten more minutes.<\/p>\n<p>When the beets are nearly done, break an egg into a small bowl then, gently pour the egg into the simmering water. Repeat this for the remaining three eggs.<\/p>\n<p>Plate the sausage and beet mixture.
