While I was on a trip to Regina, Colin suggested I visit <a href=\"http:\/\/www.beerbros.ca\" target=\"_blank\">Beer Brothers<\/a>. That was some of the best advice I&#8217;ve ever taken. The beer selection was excellent and the bartender very knowledgeable. I was drinking a rather potent Trappist beer and she recommended a fantastic chana masala to go with it. The pairing was perfect and I absolutely had to come up with my own version of the dish. If you like heat, use a full Anaheim pepper or select a hotter variety.<\/p>\n<p><strong>Time: 45 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>1 tablespoon extra-virgin coconut oil<\/address>\n<address>2 teaspoons cumin seeds<\/address>\n<address>4 cloves garlic &#8211; finely chopped or grated<\/address>\n<address>2 teaspoons freshly grated ginger<\/address>\n<address>1 large onion \u2013 finely chopped<\/address>\n<address>\u00bd Anaheim pepper \u2013 seeded and finely chopped<\/address>\n<address>2 teaspoons garam masala<\/address>\n<address>1 teaspoon ground coriander<\/address>\n<address>1 teaspoon kosher salt<\/address>\n<address>28-ounce can diced tomatoes<\/address>\n<address>2 19-ounce cans chickpeas \u2013 rinsed and drained<\/address>\n<address>\u00bc cup cilantro \u2013 chopped<\/address>\n<address>1 tablespoon fresh lemon juice<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Place a large pot on medium heat and add the coconut oil.<\/p>\n<p>When the oil is hot, add the cumin seeds, stirring often for one minute to toast.<\/p>\n<p>Add the garlic, ginger, onion and pepper, stirring occasionally for five minutes.<\/p>\n<p>Stir in the garam masala, coriander and salt. Cook for one minute.<\/p>\n<p>Add the tomatoes and chickpeas, bringing heat to high until a simmer is reached. Reduce heat to maintain a simmer and cook, partially covered, stirring occasionally for thirty minutes.<\/p>\n<p>Remove from heat then, stir in the cilantro and lemon juice.
