It&#8217;s like the television show &#8220;Chopped&#8221; without some strange ingredient you&#8217;ve never cooked with. Let&#8217;s be honest: You&#8217;d have a difficult time making something that\u00a0<em>doesn&#8217;t<\/em> taste great with chicken, bacon and sundried tomatoes.<\/p>\n<p><strong>Time: 30 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>4 thick strips bacon \u2013 cut into matchsticks<\/address>\n<address>1 pound ground chicken<\/address>\n<address>1 teaspoon kosher salt<\/address>\n<address>\u00bc teaspoon fresh ground black pepper<\/address>\n<address>1 clove garlic &#8211; finely chopped or grated<\/address>\n<address>\u00bc cup oil-packed sundried tomatoes \u2013 drained and cut into matchsticks<\/address>\n<address>\u00bd cup white wine<\/address>\n<address>2 teaspoons parsley &#8211; chopped<\/address>\n<p>&nbsp;<\/p>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Place a frying pan on medium heat and add the bacon. Cook, stirring occasionally until crisp. Remove the bacon with a slotted spoon and set aside. Pour off the fat from the pan.<\/p>\n<p>While the bacon is cooking, use your hands to mix the chicken, salt, pepper and garlic until evenly combined. Form the mixture into eight balls.<\/p>\n<p>Place the chicken balls in the pan used to cook the bacon and cook on all sides until cooked through. Remove them from the pan and set aside.<\/p>\n<p>Return the bacon to the pan along with the wine and tomatoes, stirring occasionally for three minutes.<\/p>\n<p>Plate the meatballs on top of the tomato and bacon mixture.
