Salty olives, sweet raisins, starchy yam, meaty bison, spicy hot sauce&#8230; Although it seems like there could almost be too many competing flavours, there aren&#8217;t. Everything still stands out, making this a truly addictive dish.<\/p>\n<p>I used bison simply because I&#8217;ve got so much around. You could use any ground meat or poultry, though if you want to make a truly Cuban picadillo, pork is the way to go.<\/p>\n<p><strong>Time: 45 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>1 pound ground bison<\/address>\n<address>1 large onion \u2013 chopped<\/address>\n<address>1 green bell pepper \u2013 seeded and chopped<\/address>\n<address>2 cloves garlic &#8211; finely chopped or grated<\/address>\n<address>28 ounce can diced tomatoes<\/address>\n<address>2 cups yam \u2013 peeled and diced<\/address>\n<address>\u00bd cup dry white wine<\/address>\n<address>1 tablespoon hot sauce<\/address>\n<address>1 \u00bd teaspoons ground cumin<\/address>\n<address>1 \u00bd teaspoons ground coriander<\/address>\n<address>1 \u00bd teaspoons kosher salt<\/address>\n<address>\u00bc teaspoon fresh ground black pepper<\/address>\n<address>\u00bd cup pitted green olives \u2013 chopped<\/address>\n<address>\u00bd cup raisins<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>In a wide pot or frying pan large enough to hold all ingredients, cook the bison on medium-high until just browned.<\/p>\n<p>Add the onion and bell pepper, stirring occasionally for two minutes.<\/p>\n<p>Stir in the remaining ingredients except the olives and raisins.
