The thing is, I still eat animal protein everyday. The &#8220;Meatless-Monday&#8221; idea is appealing, though rarely satisfying to a carnivore. That was until I came up with this dish. I don&#8217;t know if it&#8217;s the lightly curried almonds combined with hearty lentils, but I didn&#8217;t even feel like I needed a steak after this one!<\/p>\n<p><strong>Time: 15 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>1 tablespoon ghee<\/address>\n<address>1 clove garlic \u2013 finely chopped<\/address>\n<address>\u00bc teaspoon ground cinnamon<\/address>\n<address>\u00bc teaspoon ground coriander<\/address>\n<address>\u215b teaspoon kosher salt<\/address>\n<address>\u00bd cup raw almonds<\/address>\n<address>5 ounces mixed baby greens such as kale, chard or spinach<\/address>\n<address>19 ounce can lentils \u2013 rinsed and drained<\/address>\n<address>1 tablespoon fresh lemon juice<\/address>\n<address>\u00bd teaspoon Maldon salt<\/address>\n<address>1 ounce parmesan cheese &#8211; shaved<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Place a frying pan on medium-high heat and add the ghee. Once the ghee is hot, stir in the garlic, cinnamon, coriander and kosher salt.<\/p>\n<p>Add the almonds and cook, stirring occasionally for three minutes or until they begin to brown. Remove the almonds with a slotted spoon and set aside.<\/p>\n<p>Place the greens and lentils in the pan, tossing occasionally until the greens are slightly wilted and the lentils warmed.<\/p>\n<p>Plate the greens and lentils topped with the lemon juice, Maldon salt, parmesan and almonds.<\/p>\n<p><a href=\"http:\/\/www.kevskitchen.com\/wp-content\/uploads\/2014\/04\/Greens-Lentils.pdf\" target=\"_blank\">Get the PDF and nutrition info<\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>For both nutritional and ethical reasons, I only purchase non-factory-farmed meats.
