This classic-looking dish could be served at a formal dinner party, yet it&#8217;s fast enough to become a regular on your weekday menu. Besides being fun to eat, cooking in parchment seals in the moisture and that&#8217;s the perfect environment for cooking fish.<\/p>\n<p>There&#8217;s obviously plenty of room for substitutions in this recipe. Pick your favourite <a href=\"http:\/\/www.oceanwise.ca\">Ocean Wise<\/a> seafood, top with veg, add a bit of liquid, tie it in parchment and bake. Let me know what combinations you come up with!<\/p>\n<p><strong>Time: 30 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>4 4-ounce cod filets<\/address>\n<address>\u00bd teaspoon kosher salt<\/address>\n<address>\u00bd teaspoon fresh ground black pepper<\/address>\n<address>8 ounces cremini mushrooms \u2013 sliced<\/address>\n<address>1 bulb fennel \u2013 thinly sliced<\/address>\n<address>1 tablespoon parsley \u2013 finely chopped<\/address>\n<address>1 clove garlic &#8211; finely chopped or grated<\/address>\n<address>2 tablespoons extra-virgin olive oil<\/address>\n<address>\u00bc cup white wine<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Preheat oven to 400F.<\/p>\n<p>Season both sides of the fish filets with half of the salt and pepper.<\/p>\n<p>Toss the remaining ingredients except wine in a bowl.<\/p>\n<p>Place each fish filet on a square of parchment paper and top with the tossed vegetables.<\/p>\n<p>Fold the corners of the parchment up to form a bag and pour wine in each.
