The only real question was what to serve the beef with. I&#8217;d heard of cauliflower rice and there are many variations of it to be found on the Internet, but I wanted something a little different. Here&#8217;s the minimalist version I came up with that lets the natural flavour of the cauliflower shine through with just a hint of coconut to bring it together with the beef.<\/p>\n<p><strong>Time: 30 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>1 tablespoon extra-virgin coconut oil<\/address>\n<address>6 cups cauliflower \u2013 pulsed to couscous consistency<\/address>\n<address>\u00bd teaspoon kosher salt<\/address>\n<address>\u00bd teaspoon fresh ground black pepper<\/address>\n<address>1 pound extra-lean ground beef<\/address>\n<address>1 teaspoon ginger \u2013 grated<\/address>\n<address>1 jalape\u00f1o \u2013 seeded and finely chopped<\/address>\n<address>6 green onions \u2013 sliced<\/address>\n<address>6 large mint leaves \u2013 finely chopped<\/address>\n<address>12 almonds \u2013 chopped<\/address>\n<address>1\u00bd tablespoons fish sauce<\/address>\n<address>1 tablespoon fresh lime juice<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Place a pan with the coconut oil on medium heat. When the oil is hot, add the cauliflower, salt and pepper, stirring occasionally for ten minutes or until just beginning to brown.<\/p>\n<p>While the cauliflower is cooking, place a frying pan on medium-high heat.
