I wanted to get borscht flavours without the typically hours-long simmering process. The experiment was a definite success and resulted in this dish that&#8217;s essentially a lot of shredded vegetables, some beef and plenty of broth. Whether there&#8217;s enough broth to call it a soup I shall leave up to you. Either way, it&#8217;s super tasty comfort food, especially during this chilly Manitoba winter.<\/p>\n<p><strong>Time: 50 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>1 tablespoon extra-virgin olive oil<\/address>\n<address>1 pound stewing beef \u2013 diced to \u00bd\u201d<\/address>\n<address>1 tablespoon kosher salt<\/address>\n<address>1 teaspoon fresh ground black pepper<\/address>\n<address>3 cups beets \u2013 peeled and coarsely grated<\/address>\n<address>3 cups cabbage \u2013 shredded<\/address>\n<address>2 medium carrots \u2013 peeled and coarsely grated<\/address>\n<address>1 large onion \u2013 coarsely grated<\/address>\n<address>4 cups chicken stock<\/address>\n<address>\u00bd cup fresh dill \u2013 chopped<\/address>\n<address>1 tablespoon red wine vinegar<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Place a large pot containing the olive oil on medium-high heat.<\/p>\n<p>Toss the beef with 1\u00bd teaspoons of the salt and all of the pepper. Add the beef to the pot and stir occasionally for five minutes.<\/p>\n<p>Add the beets, cabbage, carrots and onion, stirring occasionally for five minutes.<\/p>\n<p>Stir in the stock, dill and remaining salt.
