I happened to have chicken available and it because it wasn&#8217;t just boring chicken breast, it was a worthy and flavourful substitute. If you really like the spice, double up the cayenne. Of course, you could also serve this in a bun, though here, I simply plated it with some grainy mustard and saut\u00e9ed red onion.<\/p>\n<p><strong>Time: 20 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>2 teaspoons extra-virgin olive oil<\/address>\n<address>1 pound ground chicken legs\/thighs<\/address>\n<address>1 tablespoon balsamic vinegar<\/address>\n<address>2 cloves garlic &#8211; finely chopped or grated<\/address>\n<address>1 teaspoon kosher salt<\/address>\n<address>1 teaspoon fresh ground black pepper<\/address>\n<address>\u00bd teaspoon dried oregano<\/address>\n<address>\u00bd teaspoon dried thyme<\/address>\n<address>\u00bc teaspoon cayenne pepper<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Place a heavy pan on medium heat and add the olive oil.<\/p>\n<p>Mix the remaining ingredients by hand until just evenly combined, then form into four patties.<\/p>\n<p>Cook the patties for three minutes on each side or until the internal temperature reaches 165F.<\/p>\n<p>Serve immediately.<\/p>\n<p><a href=\"http:\/\/www.kevskitchen.com\/wp-content\/uploads\/2014\/01\/Cajun-Chicken-Burgers.pdf\" target=\"_blank\">Get the PDF and nutrition info<\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>In real Cajun country, this burger would surely be made of pork (or maybe even nutria).
