Melting creamed coconut in hot water and using that as the sauce base in place of coconut milk does the trick. Not only does the cleaner and more subtle flavour let the fish stand out, it gives the chilies a clean heat that would otherwise be masked. Any mild and flakey fish filet will work beautifully in this preparation. The important thing is that the fish is sustainable so that we can all continue to enjoy it. Check out <a title=\"Ocean Wise\" href=\"http:\/\/www.oceanwise.ca\" target=\"_blank\">Ocean Wise<\/a> for some options.<\/p>\n<p><strong>Time: 20 minutes<\/strong><\/p>\n<p><strong>Serves: 2<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>2 teaspoons extra-virgin coconut oil<\/address>\n<address>3 shallots \u2013 thinly sliced<\/address>\n<address>\u00bd cup water<\/address>\n<address>2 tablespoons creamed coconut<\/address>\n<address>1 teaspoon fresh ginger \u2013 grated<\/address>\n<address>2 green chilies \u2013 thinly sliced<\/address>\n<address>1 tablespoon cilantro leaves \u2013 finely chopped<\/address>\n<address>\u00bc teaspoon plus a pinch kosher salt<\/address>\n<address>\u00bc teaspoon fresh ground black pepper<\/address>\n<address>2 4-ounce fish filets<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Place a small pot on medium heat and add one teaspoon of the coconut oil.<\/p>\n<p>When the oil is hot, add the shallots, stirring occasionally for three minutes.<\/p>\n<p>Add the water, creamed coconut and ginger, bringing to a boil and stirring until the coconut is melted.<\/p>\n<p>Reduce heat to low, then stir in the chilies, cilantro and pinch of salt.<\/p>\n<p>Place a frying pan on medium heat and add the remaining coconut oil.<\/p>\n<p>Season both sides of the filets with the remaining salt and the pepper.
