I like to think this one covers both bases, though you&#8217;ll probably want to supplement it with a side of vodka. If you don&#8217;t have vermouth, you can use a dry white wine, though to really get that martini flavour, vermouth is where it&#8217;s at.<\/p>\n<p><strong>Time: 40 minutes<\/strong><\/p>\n<p><strong>Serves: 2<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>1 tablespoon extra-virgin olive oil<\/address>\n<address>2 chicken breasts \u2013 bone-in, skin-on<\/address>\n<address>\u00bd teaspoon kosher salt<\/address>\n<address>\u00bd teaspoon fresh ground black pepper<\/address>\n<address>\u00bd cup dry vermouth (or dry white wine)<\/address>\n<address>1 preserved lemon (skin only) \u2013 chopped<\/address>\n<address>\u00bd cup whole green olives<\/address>\n<address>1 tablespoon fresh rosemary &#8211; chopped<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Place a frying pan on medium heat and add the olive oil.<\/p>\n<p>When the oil is hot, season both sides of the chicken breast with the salt and pepper, then cook for five minutes per side or until the skin is well-browned.<\/p>\n<p>Add the remaining ingredients, reduce the heat to a simmer and cook covered for twenty minutes or until the internal temperature of the chicken reaches 165F.<\/p>\n<p>Plate the chicken with the olives and pan juices.<\/p>\n<p><a href=\"http:\/\/www.kevskitchen.com\/wp-content\/uploads\/2013\/12\/Chicken-Martini.pdf\" target=\"_blank\">Get the PDF and nutrition info<\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Sometimes, you can really use a drink and other times, you just need a hearty meal.
