Be extra careful when turning the cakes, as they&#8217;re incredibly delicate. Clean flavours are what this dish is about and there are other <a href=\"http:\/\/www.oceanwise.ca\" target=\"_blank\">Ocean Wise<\/a> fish that would work equally well. If you find cayenne too spicy for your palate, substitute paprika. Regardless of what you choose, the combination of light and bold simply works.<\/p>\n<p><strong>Time: 20 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p><b>For the cod cakes<\/b><\/p>\n<address>1 tablespoon extra-virgin olive oil<\/address>\n<address>1 pound cod fillets \u2013 roughly chopped<\/address>\n<address>2 egg whites<\/address>\n<address>2 tablespoons tightly-packed cilantro or parsley leaves<\/address>\n<address>2 cloves garlic &#8211; finely chopped or grated<\/address>\n<address>1 red chili \u2013 seeded and very finely chopped<\/address>\n<address>\u00bc teaspoon kosher salt<\/address>\n<address>\u00a0<\/address>\n<address><b>For the vinaigrette<\/b><\/address>\n<address>2 teaspoons lemon juice<\/address>\n<address>1 clove garlic &#8211; finely chopped or grated<\/address>\n<address>\u00bc teaspoon cayenne pepper<\/address>\n<address>\u00bc teaspoon kosher salt<\/address>\n<address>2 tablespoons \u2013 extra-virgin olive oil<\/address>\n<p>&nbsp;<\/p>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Place a non-stick pan on medium to medium-high heat.<\/p>\n<p>Combine the balance of the cod cake ingredients in a food processor until they are well-blended, but not pur\u00e9ed.<\/p>\n<p>Form the cod mixture into eight cakes.<\/p>\n<p>Cook the cakes for four minutes on each side until golden brown, being very careful when turning them.<\/p>\n<p>While the cod cakes are cooking, combine all vinaigrette ingredients except the oil in a small bowl then whisk in the oil.<\/p>\n<p>Plate the cod cakes topped with the vinaigrette.<\/p>\n<p><a href=\"http:\/\/www.kevskitchen.com\/wp-content\/uploads\/2013\/11\/Cod-Cayenne.pdf\" target=\"_blank\">Get the PDF and nutrition info<\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Nearly all my cookware is cast-iron, though to get a nice, golden crust without deep-frying these, a non-stick pan is the way to go.
