I don&#8217;t want the vegetarians and pescetarians to get <em>too<\/em> comfortable here (let alone think they&#8217;ve converted me) so here&#8217;s a hearty Indian-inspired dish with an ample amount of ruminant flesh. If you don&#8217;t like cilantro, just know that you&#8217;re wrong, but feel free to use flat-leaf parsley instead.<\/p>\n<p><strong>Time: 30 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>2 cups yam \u2013 peeled and diced<\/address>\n<address>2 teaspoons extra-virgin coconut oil<\/address>\n<address>2 cloves garlic &#8211; finely chopped or grated<\/address>\n<address>1 teaspoon fresh grated ginger<\/address>\n<address>1 \u00bd teaspoons garam masala<\/address>\n<address>1 onion \u2013 diced<\/address>\n<address>1 pound ground bison<\/address>\n<address>1 \u00bd teaspoons kosher salt<\/address>\n<address>\u00bc teaspoon fresh ground black pepper<\/address>\n<address>1 cup frozen green peas<\/address>\n<address>2 roma tomatoes \u2013 diced<\/address>\n<address>1 jalapeno or other hot pepper \u2013 finely chopped<\/address>\n<address>1 tablespoon freshly squeezed lemon juice<\/address>\n<address>2 tablespoons cilantro \u2013 finely chopped<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Half fill a medium pot with water and place on high heat. When the water reaches a boil, add the yam. Return to a boil then reduce heat to simmer for ten minutes. Remove from heat, drain and set aside to keep warm.<\/p>\n<p>Place a frying pan on medium heat and add the coconut oil. Once the oil is hot, add the garlic, ginger and garam masala, stirring constantly for thirty seconds.<\/p>\n<p>Add the onion to the pan, stirring occasionally for three minutes.<\/p>\n<p>Place the bison in the pan, stirring and breaking apart until lightly browned.<\/p>\n<p>Stir in the salt pepper and peas, stirring occasionally for three minutes.<\/p>\n<p>Add the tomato and hot pepper, stirring occasionally for another two minutes.<\/p>\n<p>Add the yams, stirring gently to warm for one minute.<\/p>\n<p>Remove from heat.
