Use organic, non-GMO edamame for this if at all possible.<\/p>\n<p>I like the idea of edamame&#8217;s high protein content and can never seem to find enough vehicles for miso. Combining the two made perfect sense. The citrus juice in the dressing balances the miso&#8217;s umami and the apples lend a nice crunch in contrast to the edamame.<\/p>\n<p><strong>Time: 20 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>3 tablespoons fresh orange juice<\/address>\n<address>1 tablespoon fresh lemon juice<\/address>\n<address>1 tablespoon miso paste<\/address>\n<address>\u00bd teaspoon fresh grated ginger<\/address>\n<address>1 tablespoon extra-virgin olive oil<\/address>\n<address>3 cups cooked, shelled edamame<\/address>\n<address>2 small apples \u2013 diced<\/address>\n<address>2 medium carrots \u2013 peeled and coarsely grated<\/address>\n<address>\u00bd cup cilantro \u2013 roughly chopped<\/address>\n<address>\u00bc cup red onion \u2013 finely chopped<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>In a suitable bowl, mix together the orange juice, lemon juice, miso and ginger.
