The bright taste and crunch of the ginger is the perfect balance to the hearty chicken meat. Of course you could use chicken breast, though thighs are far more flavourful. I used garlic scapes as they&#8217;re in season right now. If you can&#8217;t find them, green onions will also work. The heat level can be adjusted by the number of chili peppers.<\/p>\n<p><strong>Time: 20 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>8 cups chicken stock<\/address>\n<address>2 tablespoons soy sauce<\/address>\n<address>1 tablespoon fino sherry<\/address>\n<address>Sugar substitute equivalent to 2 teaspoons sugar<\/address>\n<address>4 cloves garlic \u2013 thinly sliced<\/address>\n<address>\u00bc teaspoon white pepper<\/address>\n<address>\u00bd cup ginger \u2013 peeled and julienned<\/address>\n<address>1 pound boneless-skinless chicken thighs \u2013 sliced \u00bc\u201d thick<\/address>\n<address>\u00bd cup cilantro leaves and stems \u2013 chopped<\/address>\n<address>6 garlic scapes or green onions \u2013 sliced<\/address>\n<address>2 red chili peppers \u2013 thinly sliced (optional)<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Place the stock in a heavy pot on high heat. Stir in the soy sauce, sherry, sugar substitute, garlic and white pepper. Bring to a boil.<\/p>\n<p>Add the ginger and chicken, reducing heat once a boil is reached again.
