You can find her recipe which includes wild rice\u00a0<a title=\"Marlo's Mushroom Soup\" href=\"http:\/\/getfitcanada.com\/marloboux\/crimini-mushroom-soup\/\" target=\"_blank\">here<\/a>.<\/p>\n<p>You could make this a protein-packed and extra hearty &#8220;meatless Monday&#8221; meal by simply stirring in a can of rinsed and drained small white beans when you add the stock or forget vegetarian altogether and do what I&#8217;ll be trying next: cook up some crumbled Italian sausage before adding the mushrooms. Either way, this versatile recipe\u00a0leaves plenty of wine in the bottle for drinking while cooking or to have with dinner!<\/p>\n<p><strong>Time: 40 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>1 tablespoon extra-virgin olive oil<\/address>\n<address>2 pounds cremini mushrooms \u2013 sliced<\/address>\n<address>3 leeks \u2013 lighter-coloured base only \u2013 sliced<\/address>\n<address>4 cloves garlic \u2013 finely chopped or grated<\/address>\n<address>1 tablespoon dried thyme<\/address>\n<address>8 cups chicken stock<\/address>\n<address>\u00bd cup dry red wine<\/address>\n<address>\u00bd teaspoon fresh ground black pepper<\/address>\n<address>4 leaves Swiss chard \u2013 torn<\/address>\n<address>Kosher salt to taste<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Place a heavy pot on medium heat and add the olive oil.<\/p>\n<p>Once the oil is hot, add the mushrooms, stirring occasionally for five minutes.<\/p>\n<p>Stir in the leeks, garlic and thyme.
