Fast, fresh, crispy, super-low calories&#8230; Especially during a hot summer, the possibilities for these julienned cucumbers are virtually endless!<\/p>\n<p>Here I&#8217;ve tossed them with a simple Japanese-inspired dressing and some lobster. Of course crab would work well here and I can&#8217;t wait to try this with some smoked freshwater fish. Let me know what you find that I just have to try.<\/p>\n<p><strong>Time: 30 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>3 large cucumbers \u2013 peeled and julienned<\/address>\n<address>1 teaspoon kosher salt<\/address>\n<address>2 tablespoons soy sauce<\/address>\n<address>1 tablespoon seasoned rice vinegar<\/address>\n<address>1 teaspoon sesame oil<\/address>\n<address>Sugar substitute equivalent to 1\/8 teaspoon sugar<\/address>\n<address>8 ounces lobster meat \u2013 cooked and roughly chopped<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Toss the cucumber with the salt and let it rest in a colander while preparing the dressing.<\/p>\n<p>In a small bowl, whisk together the soy sauce, vinegar, sesame oil and sugar substitute.<\/p>\n<p>Move the cucumber to a bowl then, toss with the dressing and lobster.
