Julienned carrot would really freshen the look and the texture would work beautifully.<\/p>\n<p>What surprised me most about this simple, Asian-inspired salad is the dimension brought by the cucumber. The julienned cucumber makes it seem as though you&#8217;re eating a cold noodle salad with perfectly prepared noodles! Give it a try (maybe with some carrot) and I&#8217;m sure it&#8217;ll become a summertime standard for you.<\/p>\n<p><strong>Time: 15 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>1 small head Taiwanese (or Napa) Cabbage \u2013 shredded<\/address>\n<address>1 teaspoon kosher salt<\/address>\n<address>1 \u00bd teaspoons seasoned rice vinegar<\/address>\n<address>Sugar substitute equivalent to 1 teaspoon sugar<\/address>\n<address>1 teaspoon sesame oil<\/address>\n<address>1 large cucumber \u2013 peeled, seeded and julienned<\/address>\n<address>4 green onions \u2013 sliced<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Toss the cabbage with the salt and set aside while you prepare the other ingredients.<\/p>\n<p>In a small bowl, dissolve the sugar substitute in the vinegar, then whisk in the oil.<\/p>\n<p>Toss the cucumber, onions and dressing with cabbage.<\/p>\n<p>Serve immediately.<\/p>\n<p><a href=\"http:\/\/www.kevskitchen.com\/wp-content\/uploads\/2013\/08\/Cabbage-Cucumber.pdf\" target=\"_blank\">Get the PDF and nutrition info<\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>In looking at this dish even while assembling it, I could see that its appearance would benefit from some colour other than green.
