How could that be? Besides the bold, spicy paprika flavours, the variety of chorizo available is amazing! If you go to a good specialty store, you can find fresh chorizo that needs to be cooked, dry-cured chorizo, mild, spicy and my absolute favourite: <a href=\"http:\/\/en.wikipedia.org\/wiki\/Black_Iberian_pig\" target=\"_blank\">Iberico<\/a> chorizo. For this recipe, a semi-dry version works well, though do yourself a favour and try a few others. You won&#8217;t regret it.<\/p>\n<p><strong>Time: 30 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>2 teaspoon extra-virgin olive oil<\/address>\n<address>8 ounces semi-dry chorizo \u2013 sliced \u00bc\u201d thick<\/address>\n<address>28 ounce can chickpeas \u2013 rinsed and drained<\/address>\n<address>1 large bulb fennel \u2013 thinly sliced<\/address>\n<address>1 cup diced tomatoes<\/address>\n<address>\u00bd cup dry white wine<\/address>\n<address>2 cloves garlic &#8211; finely chopped or grated<\/address>\n<address>2 teaspoon sherry vinegar<\/address>\n<address>1 teaspoon kosher salt<\/address>\n<address>\u00bd teaspoon fresh ground black pepper<\/address>\n<address>1 pinch saffron strands<\/address>\n<address>3 tablespoons flat-leaf parsley &#8211; chopped<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Preheat a deep frying pan on medium and add the oil.<\/p>\n<p>Cook the chorizo for five minutes, stirring and turning occasionally.<\/p>\n<p>Stir in all remaining ingredients except the parsley. Turn heat to high.
