The fresh, clean flavour of this soup will have you craving it even on a hot day. Sprinkle some chili flakes on top for colour and if you eat corn products, a topping of broken tortillas will make you very happy!<\/p>\n<p><strong>Time: 30 minutes<\/strong><\/p>\n<p><strong>Serves: 6<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>2 avocados \u2013 pitted and skin removed<\/address>\n<address>2 cloves garlic \u2013 chopped<\/address>\n<address>1 tablespoon fresh lime juice<\/address>\n<address>1 tablespoon hot pepper sauce<\/address>\n<address>\u00bc teaspoon fresh ground black pepper<\/address>\n<address>2 cups water<\/address>\n<address>2 teaspoons extra-virgin olive oil<\/address>\n<address>3 large shallots \u2013 thinly sliced or finely chopped<\/address>\n<address>3 cups chicken stock<\/address>\n<address>1 pound boneless-skinless chicken thighs \u2013 diced to \u00bd\u201d<\/address>\n<address>1 teaspoon kosher salt (if required)<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Place the avocadoes, garlic, lime juice, hot sauce, pepper and water in a blender and puree.<\/p>\n<p>Put the oil in a large pot on medium heat. Once the oil is hot, add the shallots, saut\u00e9ing for five minutes.<\/p>\n<p>Add the stock to the pot, increasing the heat to high until just reaching a boil.<\/p>\n<p>Stir in the chicken and reduce heat once the stock returns to a boil. Simmer uncovered for five minutes.<\/p>\n<p>Pour the avocado mixture into the pot, stir and heat through. Taste the soup and season with salt if required before serving.
